Rice with Squid II

Rice with Squid II

ingredients:

2 cups (tea) of raw rice washed
3 cups (tea) of boiling water
1 pound cleaned squid cut into rings

Ingredients Sauce:

1 pound cleaned squid, cut into rings
2 large onions, grated
2 red bell peppers, chopped into cubes
½ cup corn oil or sunflower
1 cup of chopped parsley with stems and drizzle
4 chopped mint leaves
1 teaspoon salt
1 teaspoon hot pepper sauce

How to Prepare:

Wash the rice, leave to dry.

In a large pan fry the onion in oil until wilted.
Add the peppers and fry for a few minutes
Add the rice and cook, stirring occasionally, until golden

Add the squid into rings saute for another five minutes, place the boiling water, salt, stir well and cook over low heat, with the pot uncovered for 25 minutes or until rice is cooked.
Add more water if necessary

After the rice ready, mix the parsley and chopped mint

How to Serve:

Place on a platter with garnish around the breaded squid heads
Serve with watercress or other salad greens.

Note:

You can put 2 diced carrots cooked
1 celery chopped into small slices, without leaves.
200 grs. Fresh pea precooked.
