Queijinho - Leben ( Labani ) - III ( Options )

ingredients:
2 liters of raw milk or B without boiling10 ml of white vinegar or2 spoons (soup ) of vinegar or white wine
To Save the Glass:
500 ml of olive oil or1 bay leaf2-4 whole garlic cloves4-6 whole green olives with pits1 glass white, big wide mouth

How to Prepare :

Place in a bowl the two liters of milk without boiling ( raw ) , vinegar mix well , cover the bowl and preferably it is Tuperware with lid tightly closed .
Place the bowl in a cabinet , or inside the oven off for two days without moving .If in summer it is quickly ready the next day .
Note :
If you make the cheese from cow's milk pure , taken at the time , it sours in one day . Pasteurized milk takes more time (two days a lactic fermentation )
It can boil the milk that turns curd cheese that is another type of fermentation is lactic acid .
Note :
If you boil milk and curd acidity is seen with bacillus
After soured , put all the mass in a colander lined with a clean cloth and thin type diaper with a bowl below to get all the dripping whey " in the refrigerator ."
From time to time , with the ( clean hands as well ) , washed in order not to contaminate .Tighten the cloth to help sorar faster, go taking whey and discard , until nicely sequinho .( Always with hands well washed ) .

Using the same mass of cheese and add:
Other Ingredients :
1 red pepper, seeded and chopped white without rib1 cup (tea ) of parsley with stems chopped thinly1 cup ( tea) of grated onion without water , squeezed .1 lady finger pepper , seeds removed , chopped2 garlic cloves , crushed cored1 or 2 spoons (soup ) of paprika powder2 tbsp (tablespoons) chopped mint and drizzle1 tbsp (tablespoons) finely chopped rosemary1 spoon (soup ) of oregano , rub hands to release the aroma
Mix the cheese mass with the ingredients above.Then do the same procedure of I- option .
Note :
Can be prefer with white cheese or ricotta .To give point add sour cream , cheese or cream cheese , or grated Parmesan cheese
