Sweet Figo Green Site
ingredients:
2 pounds of whole green figs
2 ½ pound of crystal sugar or refined
2 cinnamon sticks, 3 slices of ginger and 10 cloves of India

How to Prepare:
Place the figs in a large bowl or cloth bag with salt or rice straw.

Rub them well in salt to remove the hairs from the bark, until nicely smooth.

Wash well in running water.

fingers over the figs.

Allow to soak for 24 hours, covered with a cloth.

Bring the syrup to fire up the thread point.

Thread point is when you let the syrup drip it runs slowly forming a wire on the tip of the spoon.

Give a boil in lightly figs in this syrup, remove them with a slotted spoon to a colander and run to finish draining.

Pass the figs in sugar and allow to dry.
