Cake St. John - Junino


ingredients:


1 pound sweet potatoes cooked and squeezed
2 cups (tea) of wheat flour sifted
50 or 100 grs. dried coconut grated
50 grs. butter
6 large eggs - egg whites firm
250 ml of coconut milk or cow's milk
1 heaped tablespoon of baking powder

How to Prepare:


Wash the sweet potatoes, unpeeled cooking, then peel, go through the potato ricer.

Beat in mixer, until well mixed, egg yolks, butter and sugar, then gradually add the boiled potatoes and squeezed coconut milk, grated coconut, wheat flour, baking powder, until a uniform mass.

Stop the mixer to incorporate the egg whites into the batter, mixing with the whisk, until a homogeneous mass

Dump the dough in a greased with butter, sprinkled with flour, and flatten with a spatula.

Medium preheated oven 180 º C until staining, put 30 to 40 minutes

Poke a toothpick to the bottom of the form to see if the cake is baked, the toothpick comes out dry, you can switch the oven off

Do not forget to remove the cake from the oven, so it is baked

Cover the cake:


syrup:

2 cups of milk
1 cup sugar
1 tablespoon of cloves
4 pieces of cinnamon
5 slices of ginger thinly sliced


How to Prepare the syrup:

Mix the milk with the sugar, add the cinnamon and clove ginger, boil for ten minutes
Place the hot syrup on hot cake, put up coconut

Note:
