Bean Drover
Ingredients:1 ½ cup (tea) of cooked beans: Brindle, jalo,pinkish, or charisma.1 cup of fried bacon1 cup (tea) of chopped onion, 4 cloves of garlic or cored1 cup (tea) of chopped parsley½ cup (tea) of chopped chives½ cup (tea) of oil300 grs. dried beef chopped into cubes (is jerky)200 grs. cassava flour, or to taste200 grs. of pork sausage cooked in water (optional)
Other Ingredients:
6-10 cabbage leaves torn without stalk2 ripe tomatoes, peeled and seeded2 red or yellow peppers chopped niggling1 leek white part only thinly sliced (optional)
Seasonings;1 lady finger pepper, seeded and chopped without the ribs.1 teaspoon (tsp) grated fresh ginger2 leaves or ½ teaspoon (coffee) powder bay1 spoon (soup) shallow salt1 pinch of nutmeg
Decoration is Optional:2 whole peppers with stem wash and dry3 to 4 boiled eggs cut in four parts1 glass of palm cut into slices1 cup pitted black olives1 cup (tea) of thinly sliced cooked sausage and friedTomato slices to tasteHow to Prepare:Cut the dried beef into small pieces, soak inEve, changing the water several times.
The next day throw water out, rinse well under running water.Until Aferventar amolecer.Reserve.
Cook the beans in the traditional way without kneading, do not put seasoning. (See previous recipe), however do not let overcook, or it gets hard. Book
Water will drain the beans (do not throw) freeze to make soup.
Separately fry the bacon in the oil add the onion, beef jerky, the cooked sausage thinly sliced, tomatoes, peppers, salt, add the ginger, laurel nutmeg, simmer until all ingredients are cooked .
Add the sautéed beans and if necessary a bit of cooking broth.
After the cassava flour, mix well, cook for 5 'minutes.
Then saute oil, onion, not leaving much time in the fire that it loses color.Add the sautéed cabbage and parsley and chives, out of the fire.
To serve arrange on a platter garnish with two peppers finger girl.Decoration is to your liking. See aboveWith white rice. And Arugula Salad
