Galinhada Mining of CIDA
ingredients:
1 large chicken or 1 ½ pound of chicken thighs without
skin.
1 cup corn oil or necessary
1 spoon (soup) salt
1 spoon (soup) of hot pepper sauce
1 teaspoon (tsp) grated ginger,
1 pinch of powdered bay
Do not put tomatoes.
For the rice:
2 cups (tea) of washed rice
4 cups boiling water, 2 tablespoons of corn oil
2 spoons (soup) of grated onion
How to Prepare the chicken:
Wash the chicken, seasoning, allow to stand for 2 hours,
then drain.
Dry with paper towel to avoid splashing the hot oil.
Put the oil in a wide pan and high heat and let go adding the chicken pieces beside each other with care.
The oil has to cover the chicken, go frying and turning until it is almost done, (the chicken has to be cooked almost)
Then remove the chicken pieces and (discard any oil from the pan). Reserve.
In the same pan you fried the chicken and place the unwashed rice and onion and salt and if you need to put two tablespoons oil, saute a little and then throw boiling water, mix well.
Leave cooking to reduce the water by half.
Remove the pan from the heat and go stuffing the chicken pieces to the bottom without a remount.
Return pan to heat until almost dry with low heat.
Turn off the heat, place the pan in the oven "off", leaving resting 30 'minutes.
