Cheap + Cod Sauce

Cheap + cod Sauce


800 grs . of desalted cod folded for 24 to 36 hours keep in the refrigerator.

Other Ingredients:

4 small onions cooked or canned 10 in very small
400 grs . small potatoes cooked shelled
200 grs . Baked yam small
200 grs . of boiled cassava
200 of ripe pumpkin diced cooked
4 chuchus cooked cut into four pieces
200 grs . cooked snow peas
1 cup (tea ) of cooked fresh pea
1 cup cooked whole pod
1 or 2 cups ( tea) of tomato
1 large carrot cut into strips cooked by length
2 eggplants cut into cubes cooked
2 green zucchini , cut into slices cooked
6 bananas cooked with whole shell
4 ears of cooked corn cut into thick slices
6 to 8 pre cooked cabbage leaves
200 grs . large black olives ( decoration )
6 hard boiled eggs cut into four ( decoration )
4 red peppers , seeded cut into strips
1 small cabbage cooked , then cut into pieces



Dressing the vinaigrette :

2 cups (tea) and washed onion chopped fine drizzling
2 cups ( tea) of finely chopped parsley with stems
1 cup (tea ) green onions cut into thin slices
1 cup ( tea) of chopped green olives
4 tomatoes, peeled and chopped without seeds , diced
1 chili finger lady without seeds or chopped sauce
pepper to taste
1 red pepper chopped without seeds (optional )
1 spoon (soup ) shallow salt
2 spoons (soup ) of capers or to taste
1 cup of vinegar
1/2 cup filtered water
Olive oil to taste

How to prepare sauce to the vinaigrette :


Place in a bowl the chopped onion , parsley , chopped tomatoes , salt pepper , green onions and other ingredients , then add the vinegar and lastly the oil to taste.

How to Prepare the cod :

Place the cod to soak in the refrigerator for 24 to 36 hours.
There are 12 hours for each 2 cm thick.
Place cod in greased oven with butter, letting it brown .


Place the cooked vegetables on a platter and hot mud , bake in the oven has cooled .
The cabbage wrap and stick in the corners .
When the cod is golden brown , remove and place on platter neighborhood interspersed with vegetables.
Serve piping hot with the vinaigrette .
Put the sauce in small bowls one for each person .


Note :
Put the vegetables you prefer .
You can add mushrooms , hearts of palm , asparagus or pickled or all three together , drained and rinsed .

Decoration :

Tomato and black olives and hard boiled eggs .
