Minestrone - Big Soup Beans

ingredients:


½ pound of cooked pinto beans
2 liters of cold water
30 grs. fried bacon
4 garlic cloves, remove the old kernels if, after kneading
2 spoons (soup) of oil
1 grated onion
2 tablets of broth (optional)
salt and pepper to taste

Other Ingredients:

2 medium carrots diced
4 medium potatoes cut into small dice
1 plate of shredded cabbage
2 stalks celery, chopped (optional)
1 leek chopped white part only, thinly sliced
1 cup (tea) of chopped parsley
½ cup (tea) of chopped scallions, thinly sliced
½ cup (tea) of oil
1 cup (tea) of our Father noodles, or Hail Mary
2 tablespoons red pepper sauce

How to Prepare:
Choose beans, wash soak for 8 hours or.
Put the beans in a pressure cooker, let it boil, turn off heat and let stand for 30 'minutes.
Then open the cooker add more hot water, bring to heat for 20 'to 30' minutes.
Allow to cool to open the cooker.

Put the beans and a little water in a blender beat until a thick cream, go to a large pan without straining.




In a frying pan fry the bacon in the oil, add the crushed garlic and fry become, throw that in hot broth seasoned bean beaten, boil for 5 'minutes, low heat.
Add the broth carrot, potato cabbage, let cook for 5 'to 10' minutes or until the vegetables are "al dente".

Serve in a clay bowl, sprinkle chopped parsley on top

Note:

You can replace the potato by yam, yam, cassava, cassava all chopped ripe pumpkin.
You can add chard, kale, endive, Catalonha, pod, pea pie etc..
