Borscht With Mashed - Delicious

  ingredients:

Beef broth:

½ pound of muscle cut into small cubes
1 large onion cut into four pieces
1 whole medium carrot, 3 cloves garlic, 1 bay leaf,
2 stalks of celery cut into four pieces, 1 leek
3 thin slices of ginger, 1 cinnamon stick (optional)
2 liters of cold water.

How to Prepare the broth:

In a pressure cooker, place water, beef, onion, carrot, garlic, celery, leek and the seasonings.
Put to cook for 20 'minutes, let cool in the pan to finish cooking. No need to fry the meat.

Soup ingredients:

1 liter of cold beef broth strained.
4 whole unpeeled beets, washed well.

Put the broth and beets in a pressure cooker.
Lead to heat for 30 'minutes, let cool in the pan.

After the cooked beets, peel cut into four parts.
Put a little of the broth in a blender with a few pieces of beetroot, beat well in a blender until liquid.

Repeat with the remaining beets.
The broth should not be too thick nor too liquid.

Mashed potatoes:


1 pound of cooked potatoes and squeezed
2 tbsp (tablespoons) butter
½ cup of cow's milk or cream tea
1 tablespoon (dessert) salt

How to Prepare:

Put in a pan the squeezed potatoes, butter, salt.
Lead to fire stirring constantly, check dripping milk gradually, until a uniform mass, we drop the bottom of the pan.
If it becomes too hard add a little cream.
The consistency of mashed ** is firm, not a cream. **

Mode of Service:

Place in a deep dish the hot broth and beets.
Make the center a pyramid of mashed potatoes that get 4 fingers above the broth.

To make the soup, take the broth, then puree.

For Dinner:

Accompanies roast chicken pieces, cooked with broccoli and carrots in butter past.
Heart of palm salad cut into thick slices, fresh figs, washed without the house cut in half.

Note:
With the muscle cooked leftovers, make a salad with onion, garlic, parsley and bits of tomato. "Serving on another occasion."
With the other ingredients of the broth leftovers, make a soup.
