Mandioca and Cará Soup With Chef's Secret:

II Options

Ingredients:

300 or 500 grs. of manioc
200 to 300 grs. pork sausage cooked in water. then remove the skin
50 grs. of bacon cut into cubes
1 cup of grated or finely chopped onion
1 cup chopped parsley
1 cup (tea) minced tomatoes without skins without seeds
½ cup (tea) green chives only part white
1 glass of 250 ml coconut milk (optional)
2 tablespoons beef broth
2 liters of water
2 tablespoons corn oil
Sausage is optional

Way of preparing:

Peel cassava, cut into small pieces, wash well under running water
Put cassava in a pan to cook with water until softened, put in 20 to 30 minutes.

In separate cooking the sausage, having previously stuck with a fork to draw the air. Then remove skin cut into thin slices Reserve

After cooked cassava, beat the casserole with a little of the casserole's cooking water until it is thick. Add the coconut milk.

Season with bacon and onion and fried tomatoes in oil

Coconut milk is optional:
If you want you can add 1 glass of 250 ml coconut milk.

Place the soup in a soup bowl with lid

Serve in a deep dish with a flat side dish

Can be used in individual clay pots

Chef's Secret:
If you cook the cassava with coconut milk, it gets tastier.

Soup of Cará or Yam

Ingredients:

1 pound of muscle
1 pound or raw yam
2 liters of cold water
1 onion, grated or chopped
1 bay leaf
1 pinch of grated ginger or 2 thin slices
2 tomatoes without skins without seeds
2 celery stalks without leaves (optional)
1 bunch of parsley and chives tied (washed)

Way of preparing:

Peel the yam or (yam) wash well under running water, chop large pieces, place in a bowl covered with water
Put the muscle to cook with a quart of water for an hour in the pressure cooker over low heat. If you want you can change the meat for meat broth.

How to Serve the Meat:
