Tender to California

1 tender of approximately 2 pounds

Other Ingredients:

1 glass of dry white wine
1 glass of pineapple syrup
1 glass of orange juice
½ cup of honey or Karo
1 cup of cloves of India
Fruit Compote:
10 drained pineapple rings in syrup
10 halves of drained peaches in syrup
10 black plums without drained lumps
10 whole figs in drained syrup
04 apples without peel cut into pre-cooked slices (optional)
1 medium cherry glass in drained syrup
Put half cherry in the center of each pineapple slice
Way of preparing:
With a knife scratch the diamond-shaped tending, at the intersection of scratches, prick a Indian carnation.
Brush the tend with honey or Karo.
Bring the preheated oven to 180 º C for 40 minutes for each pound of meat.
While in the oven, drizzle with the wine mixed with the pineapple syrup and the orange juice, equal parts.
After roasting place the tender on a platter, garnish with the fruit jams.
For Christmas and New Year:
To put a cup of (tea) of caramelated Portuguese chestnut.
1 cup walnuts without the husks or hazelnuts or almonds
Raisins without seeds
