La Riva Oven Cod + Photos


Ingredients:
2 kilos of cod in average dessalgado, for 24 hours.

1 kilo of boiled medium potatoes cut in half, or ball.
6 red bell peppers without seeds and without the white ribs in thin strips.
3 yellow or green peppers, seeded and without white veins (optional).
1 ½ pound onion cut into petals (cut into four)
1 glass of 100 grs. Capers drained, washed.
½ liter extra virgin olive oil.
1 or 2 cups (tea) of whole purple olives.
1 cup chopped parsley to sprinkle on top, before serving
Way of preparing:
In a large saucepan, sauté the olive oil, the onion in petals and the peppers in thin strips, as soon as the onion withers turn off the fire, cover the pan, let it stand for a few minutes to finish cooking. With the heat itself.

How to prepare the cod:
