Traditional Chicken Soup + Photo


Ingredients:

1 pound chicken drumstick without skin or fat or
1 pound of gizzard fat, or half and half
2 liters of cold water

Spices:

1 onion, chopped
1 tablespoon (soup) shallow salt
1 tablespoon (soup) _ pepper sauce (optional)
1 tablespoon (soup) or (tsp) grated ginger or thinly sliced
1 bay leaf, or 1 ¼ pinch spoon (coffee) of ground bay
1 pinch of nutmeg (optional)
4 cloves garlic, crushed the garlic is old take the core

Other Ingredients:

3 medium carrots cut into cubes
2 medium potatoes cut into cubes, or manioc (optional)
3 large peeled tomatoes without seeds chopped
2 celery stalks shaved without leaves cut into thin slices
1 large leek whole or only the white part cut into thin slices.
1 cup (tea) of uncooked rice washed
1 cup chopped parsley, add before serving the soup
½ cup chopped chives equal to salsa
100 g. grated Parmesan cheese, sprinkle over each dish before serving (optional).


Way of preparing:

Remove the skin and fat from chicken, rinse well under running water.
Place the chicken with cold water in the pressure cooker and so whistle is boiling lower the pin and simmer over low heat for 20 minutes.
Turn the pan to let out all the steam, without putting under the tap, or with a fork.
Allow to cool normally.
Remove the chicken pieces, and the fat that was upon.
Put the rice, carrots celery stalk without leaves, tomato, onion the ginger, cover the pan and simmer put 5 'minutes, turn off the pan and let cool alone.

Take cover, place the celery, bay leaf pepper sauce and let put another 10 minutes in the heat without pressure
Remove the ginger slices bay leaf.
When the soup is ready, add the parsley and chives chopped
Serve the grated cheese separately, each person puts their taste

Note:

Never put parsley, chives, celery leaves and other
leaves, in the pressure cooker that clogs the valve.
                 
* Never place the pan closed pressure under the tap to cool the pan. *
Besides the danger of escape valve, the durability of the rubber goes to drain, that is, you spoil the rubber.
