Oxtail with Cassava

ingredients:

1 ½ pound cow tail with plenty of meat , cut into 5 cm , remove excess fat , discard the very small pieces
1/2 cup of corn oil
1 liter of hot water for cooking.

Other Ingredients:

1 kilo of cassava cut into small pieces , boiled in one liter of water
1 pound of tomatoes peeled and seeded
 ½ pound of grated onion , or chopped into small pieces
1 red pepper ,
1 leek part only cut into thin slices banking ,
Chopped 2 stalks celery , thinly sliced
1 cup ( tea) of chopped parsley with stems
½ cup ( tea) of thinly sliced ​​scallions

seasoning :

1 spoon (soup ) of salt , 1 teaspoon (tsp ) grated ginger , 1/ 2 teaspoon (coffee ) of ground laurel,
Pepper ½ chopped finger girl without seeds .

How to Prepare :

Fry the leeks with celery , add the onion , bell pepper and seasonings .
In separate pan fry the meat until nicely browned.
Stir in tomatoes make the sauté , then add the sauté another pan, boiling water and let the fire for a few minutes .

If necessary add more hot water.

Serve oxtail , white rice, steamed okra, endive salad or chopped cabbage
