Xinxim Chicken With Coconut Rice
 
ingredients:
 
2 pounds of drumsticks or 1 chicken cut into large chunks250 grs . of ground dried shrimp shelled or unshelled2 spoons (soup ) of maize starch ( cornstarch ) , or rice flour1 cup (tea ) of hot water
 
seasoning :
 
1 spoon ( soup) of grated ginger2 spoons (soup ) of corn oil1 or 2 spoons (soup ) of palm oil (optional )2 % of the weight of chicken meat with prawns salt , or1 spoon (soup ) salt2 large onions , gratedHow to Prepare :
Wash the chicken pieces or whole chicken .Cut the chicken into pieces at the joints , season with salt and ginger , let stand for two hours , do the same with drumstick .

In a large saucepan fry the chicken pieces in corn oil and also in palm oil , add the onion and ground shrimp .
 
Put a cup of hot water , simmer until chicken is tender , add more if you need hot water to cook.Once cooked add the corn starch , dissolved in half a cup of cold water.
 
If it gets too dry add more hot water.
 
Accompanying white rice cooked with coconut milk , replace half the water with coconut milk.
 
To serve:Place the chicken on a platter Xinxim , separate riceTurnip salad or grated cucumber.
 
Note :Instead of palm oil , can substitute for annatto oil that is healthy only downside is that it darkens the skin .
        
Oil Annatto1 liter of corn oil100 grs . of annatto seeds
 
Put the oil and annatto seeds in a potheat it up without boiling .When cold store in the same glass that removed the oil." Annatto is the crushed seed that you buy as paprika. "
