Grilled Mullet With Icing Salt - RS .
ingredients:
1 large or 2 medium mullet

Salt Crust :
1 or 2 pounds of coarse salt
1 or 2 egg whites without hitting
" Some people do not lightly beat the egg whites in snow "

seasoning :
 Herbs to taste
Parsley, basil , rosemary
Sprinkle the herbs inside the fish with oil .

How to Prepare :
Ask the fishmonger to clean the mullet , opening the belly, not cut , leaving the whole fish .
If have roe asks to reserve to make the streusel .
Rinse the mullet inside and out.
Place herbs salt and corn oil.
Place the mullet without seasoning in a nonstick baking sheet .
Cover with coarse salt , mixed with egg white .
For every pound of salt 1 egg white will .
Bake 180 º C until the crust becomes very stiff , like brick.
Serve to break the crust with a hammer and kitchen clean .

You can follow up with banana farofa , manioc or shrimp , mullet roe farofa .

The mullet is originally from Lagoa dos Patos in Rio Grande do Sul, is fish winter .
