Eggplant for Vegetarians and Others + Photo

Ingredients:
4 to 6 eggplants without peel cut into cubes
1 medium onion finely chopped
3 tablespoons oil
1 tablespoon of salt
½ pepper seeded minced finger (optional)
Hot water needed to cook the eggplant
Other Ingredients:
2 tablespoons parsley with chopped stem See below
2 tablespoons chopped spring onion
Way of preparing:
In a medium saucepan, put the oil the onion to let wither, add the eggplant in cubes, go braising and dripping water until cooking.
When it is transparent, do not let it collect too much water.
If desired you can leave the eggplant with water for 15 minutes, squeeze well to remove all the water before braising.
Serving Mode:
White rice, beans or (other legume), short cabbage salad, or celga
For Non-Vegetarian:
200 grs. Canned tuna or anchovies in oil, drained
Before removing from the heat, add tuna or anchovies
If you want you can accompany garlic and oil pasta.


Note:
Do not waste the stem of the parsley that is rich in vitamins and minerals, better than the leaves
