Homemade Orange Candy II Options + Photos





Ingredients:


24 sour oranges with coarse bark
popularly it is called Orange-clove, or Orange of the Earth
the same as the weight of the orange is the sugar
1 pack of cinnamon sticks (20 grs.)
1 pack of Indian cloves (20 grs.)
1 large piece of sliced ​​ginger

Way of doing:

Grate the peel of the orange, on the fine grater or take off the fine skin, with a sharp knife, as if it were egg skin, clean the whole orange
As you clean the oranges, place them in a cauldron with plenty of cool, uncut water.
After all the oranges, clean, cut into four pieces, without separating the parts, and throw the bagasse off
The cut should be a little below half the orange
Thoroughly wash the oranges carefully so as not to break the pieces
Place the oranges in a large bowl of white plastic or green with plenty of cold water.
If you can put together a little doll of ash (it's a small cloth bag with 6 tablespoons of ash)
Leave to soak for 3 to 7 days, changing the water every day, several times, day
Then wash well, with enough water in a large bowl, put ten times, then in running water, several times

If you want you can give a hibernation in the oranges, then cool well before washing

Cover the oranges with cold water, as soon as it boils, count 5 minutes, turn off the heat, let cool inside the pan
Then wash again several times to remove the bitter

Drain all water, before putting in syrup

How to prepare the syrup

Mix the sugar with double water, add clove to cinnamon and ginger, make a thin syrup.

After the syrup is ready to cool, do not remove the clove, cinnamon and ginger
 
Place the cold syrup in a large saucepan, add the washed or dried oranges

As soon as it boils, lower the heat well and let it cook for two hours
Remove from heat and let cool inside pan

Do not take the candy out of the pan
The Process Below is Optional:

To cook the sweet for three days in a row, to put thirty minutes, in the morning period and thirty in the evening, if the syrup dries a little, add cold water gradually.
If the candy is hot put hot water
After the candy ready to cool
Place in a refractory with lid, store in the refrigerator, or sterilized wide-mouth glass with screw cap
Note:
Already exists in the Supermarket the orange peeled and already prepared.
Just make the syrup. Let cooking the oranges equal the recipe above.

Note:

If you are storing the orange jam with syrup, outside the refrigerator, do not forget to sterilize the glasses and the lids.
