Traditional Pancake with Vegetable II Fillings
Traditional Pancake with Spinach and Ricotta + White Sauce
Ingredients:
I - Mass:
2 cups (s) of sifted wheat flour
2 cups (tea) cold milk
1 cup cooked spinach, squeezed, or
1 tablespoon of Flour (powder) of spinach, or carrot or beet See below.
2 tablespoons (soup) corn oil
1 teaspoon of salt
3 large whole eggs

I Filling:
300 grs. of raw ground meat
1 onion
1 cup pea or cooked carrot
½ cup finely chopped olives.
2 tablespoons chopped parsley
1 or 2 tomatoes skinless and seeded chopped
How to prepare the filling:
Sauté the meat with the onion, the tomato. Let cool add the other ingredients.
Serve with tomato sauce and grated cheese
II Spinach filling with Ricotta:

500 grs. of crushed fresh ricotta
4 tablespoons (s) can of sour cream
4 tablespoons of cooked spinach and sautéed with onion
1 cup unsweetened raisins (optional)
1 ½ teaspoon of salt
How to prepare the filling:
