Eggplant for Vegetarians and Others + Photo


Ingredients:
4 to 6 eggplants without peel cut into cubes
1 medium onion finely chopped
3 tablespoons oil
1 tablespoon of salt
I red peppers in thin strips or cubes.
½ fingered seedless minced pepper (optional)
Hot water needed to cook the eggplant
Other Ingredients:
2 tablespoons parsley with chopped stem
2 tablespoons chopped spring onion

Way of preparing:
In a medium saucepan, put the oil the onion to let wither, add the eggplant in cubes, go braising and dripping water until cooking.
When it is transparent, do not let it collect too much water.
If you like, you can leave the eggplant in the sauce with water and salt for 15 minutes, then squeeze well to remove all the water before braising.
