Octopus Stew

Octopus Stew


ingredients:

2 pounds octopus cleaned, washed and chopped into pieces of 5 cm

Other Ingredients:

500 ml of white beer not cold
½ cup of cold water
1 cup (tea) pickled onions (the mini-onions)

seasonings:

1 cup (tea) and full of chopped onion or grated
1 cup (tea) of oil
1 teaspoon (tsp) grated ginger
1 pinch of nutmeg (optional)
2 bay leaves
1 tablespoon (coffee) cumin (optional)
1 teaspoon (tsp) salt


sauce:

1 cup (tea) dry red wine of good quality
6 ripe tomatoes, peeled and seeded
½ liter of concentrated tomato sauce
6 cloves of India
1 small cinnamon stick
2 tablets of chicken



Fresh Herbs:

1 spoon (soup) and full of fresh chopped herbs:
basil, marjoram, parsley, mint, rosemary, sage.


How to Prepare:

Clean the octopus, rinse under running water, cut into large chunks.
Place the octopus in a large pot with beer and water, leaving cooking over medium heat for 15'minutos, drain, and let cool.
